When Southeast Europe (or the Balkans) and hot peppers are considered together, I think Ajvar would be the first to come to mind. I think the closest flavor to it in Turkish cuisine is "salça", but our topic is not about both... I would like to talk about a practical method that you may want to use in or alongside meals. Crispy Fried Chili Chips is a delicious option preferred by families of Balkan origin in Türkiye...
I think it is one of the must-haves in the meal, which we have featured in the first place in our Edirne Cousine: Top Three post. It's super easy and you only need two things: Dried chili pepper, and sunflower oil. [In the summer, I recommend that you make your preliminary preparation by drying the red hot peppers in a sunny place.] You can store the peppers you have dried in the summer in a moisture-free environment for a long time. And whenever you want, you can prepare it immediately with this recipe. I think it is also a good method for home economics.
We wash the dried peppers thoroughly and dry them without damaging them. Maybe you can leave it for a day to dry completely. Afterwards, we throw it into the hot oil prepared in advance and fry it for a maximum of ten minutes. You will already see the color change.
You can serve it with almost any meat dish. You can also prepare a meze with yogurt, garlic yogurt or strained yogurt. My preference is to just eat with the food without mixing it with anything...
