The loss of natural water resources and the inefficiency of the soils are other problems that should not be forgotten. When this is the case, it is disturbing to throw the stale breads in the trash...

There are many solutions for stale breads in world kitchens. Papara (Popara) is a preferred solution in Türkiye, Greece, Bulgaria and many other Balkan countries. I have to mention that Papara is a meal made differently even in Türkiye. Therefore, I have to say that it can be done differently in another Balkan country. Papara is a meal identified with stale bread. I recommend you to evaluate it with this method with the stale breads in your house... (We even keep breads to make Papara, so delicious...)

Note 1: You can make this delicious meal with all kinds of bread. Don't take into account the type of bread and chop the breads according to your preference...

Note 2: You can see the element of cheese and yogurt in the Papara recipe. This recipe is a bit more specific to Anatolia and there is no cheese or yogurt. I haven't tried them, but it may be nice if you want to try them.

Servings: 4-5 people

Ingredients

Stale bread as in the photo, (You can cut it smaller)

200-300 grams of ground beef,

1 onion, (Chop them in the size of chickpeas)

1 potato, (Chop them in the size of chickpeas)

2 cloves of garlic, (beaten)

2-3 chili pepper, (finely chop)

2 tomatoes, (finely chop)

1-2 teaspoons of tomato paste,

Half a cup of oil,

3-4 branches of parsley,

1 teaspoon of salt,

Half teaspoon of black pepper,

Half teaspoon of crushed red peppers,

4 glasses of water.

Directions

Roast onion, the ground beef with the oil.

Add the garlic, potato, pepper and continue to a few minutes.

Add the paste and tomatoes and, continue to roast.

Add the water and when it starts to boil, keep it at medium temperature for 15 minutes. Then add the finely chopped parsley and turn off the stove, and wait it for 10 minutes.

Add the breads to the plates you serve and put the food on it.

You can serve with yogurt or cacik.
