Fried Chicken Cajun Pasta


Ingredients

8oz chicken breast 

16oz penne pasta

Pepper Jack Cheese 

Italian Style Cheese 

Cooking cream or Heavy cream 

Chicken or vegetable stock 

Olive oil 

Sunflower oil, canola oil or corn oil 

1 red onion 

1 green pepper 

1 yellow pepper 

1 red pepper 

2 cloves garlic 

6oz cherry tomatoes 

Fresh parsley 

Flour 

Corn starch 

3 eggs 

Panko bread crumbs 

Kosher or sea salt 

Black pepper 

Cajun seasoning 

Paprika 

Butter

Directions

To begin this recipe you will need to start by filling a pot with water and add salt and put a lid on it and turn the heat on med high to begin boiling the water.

When your water is heating up, cut the 8oz of chicken breast into equal pieces and place in a bowl and season with salt, black pepper (fresh ground) and paprika, after you washed your hands and cleaned your area, take a bowl and add the flour and corn starch and add salt black pepper and paprika and mix together. Take your 3 eggs and crack them into a bowl and stir them with a fork and put to the side in another bowl. Take a large pan with high sides and to fry in add about 1 inch of sunflower oil (I use this cause of its high smoke point you can use canola or corn oil). Start to heat up your pan on high, start to dredge your chicken, flour than egg and then panko and place the pieces in a plate or pan so you can fry them. Once your oil is heated, take tongs and add one piece at a time leaving enough space for proper frying and continue to dredge the rest of your chicken, before you take out your chicken take a baking dish or sheet pan and line it with paper towels to absorb the excess oil form the chicken. Once your chicken all fried it time for the sauce.

Small dice your onion and all your peppers and cut the cherry tomatoes in half and chop the garlic, in a diffident pan add the olive oil and heat it up (making sure it doesn’t burn) add your onions and fry them off once they become translucent, than add the peppers and season them with salt and black pepper. Cook them down until they are soft add the garlic cook for a minute or two. Add the chicken or vegetable stock to the pan to deglaze it. Add the cherry tomatoes. Then add the heavy cream or cooking cream to it let it thicken on high for a minute. Than lower the heat to low. By this time your water for the pasta should be boiling add the pasta and stir the pasta put back the lid let it boil for 8-9 minutes. Season your sauce with salt & pepper and Cajun seasoning, taste your sauce and make sure you stir it every few minutes as well. Check your pasta if it’s close to being done save 1 cup of pasta water for the sauce for later. Drain your pasta and add it slowly to the sauce making sure you don’t add too much to the sauce. Once you have a good sauce to pasta ratio stir it and keep it on low until the pasta is cooked. Add the pepper jack cheese and Italian style cheese to it and mix in well and add a little butter to the sauce for richness of the dish once it how you like it plate it up and add your fried chicken to the top. You can add fresh parsley to the top or even more cheese if you desire.
