Recipe: Chard Gözleme

Turkish cuisine is also famous for its pastries, such as the Balkans and the Middle East. One of the pastry products prepared at almost every corner, especially in touristic areas, is gözleme. Gözleme can be prepared with minced meat or with various cheeses. The recipe is for five people. Therefore, if you want to consume it as a meal, you can consider this recipe. If you think of it as a treat at your tea time, you can serve each gözleme by dividing it into two.

Servings: 5 people

Ingredients

5 Filos (Phyllos),

Half a kilo of chard, (You can also make it with spinach if you want. All the same.)

Half a kilo of whey cheese,

3 spring onions (or 1 onion),

2 tomatoes,

1 teaspoon red pepper flakes,

Half a teaspoon of black pepper flakes,

A quarter cup of olive oil.

Directions

1. For the mortar, we finely chop the chards. (We only use the leaves of the chard, not the branch) We also cut the onions and tomatoes that we peeled thinly. Then add the cheese, spices and olive oil and mix well.

2. We close it until it comes from the part of the filo close to you to the middle. In other words, the side of the filo that faces you is pulled up to the middle. Thus, the top side becomes a single layer and the bottom side becomes a double layer.

3. We add the inner mortar to the middle. We pull the top layer to the bottom and fold it. We fold the right side enough to cover the mortar. We do the same for the left side. Thus, it becomes a square shape.


4. Melt a hazelnut-sized amount of butter in a pan. Then we put the gözleme we prepared and cook it by turning it with a spatula. When the bottom side is cooked, we turn it over and cook it in the same way.


You can take the gözlemes you prepared on a napkin or paper and move on to the other. It can be consumed hot when all is completed. Also, if you keep it in the fridge, you can wait a few more days and warm it up in the microwave before serving.

Filos (Phyllos)

I prefer to buy filos ready-made. Filos, which is used to make baklava and pastries, is sold in markets and bazaars in Turkey. Ready-made products are a little salty so that they last longer. Thinking that there might be some places where ready-made phyllo dough is sold outside of Turkey, I asked Google. As far as I understand, it can be found easily in Western European countries such as Germany, France and the Netherlands, where the Turkish population is concentrated. In the USA and Canada, I was able to find a few websites that sell phyllo dough.
