Recipe: Kısır (Vegan Food)

One of the first things that comes to mind as an meze or salad in Turkish cuisine is kısır. To be honest, it can be considered as a meal. We can say this: If you put less on the plate, it is a meze, if you put more on the plate, it is a satisfying meal. I must also add that it is the most delicious vegan example of Turkish cuisine.

Kısır is a popular dish in every region of Turkey. However, there may be minor details in the recipes. For example, there is no pomegranate syrup in this recipe.

Total Time: 30-40 minutes 
Servings: 8-10 people

Ingredients

Half a kilo of bulgur, (not the bulgur used for pilaf, but the finer bulgur used in meatballs) [Thin Wheat]
A medium-sized lettuce,
1 bunch of arugula, parsley, dill,
1 onion,
5 spring onions,
3 tomatoes and cucumbers,
2 green garlic,
3 teaspoons of salt,
2 teaspoons of ground black pepper, crushed red pepper, red pepper powder, cumin, dried mint,
1 tablespoon each of tomato and pepper paste,
Juice of 2 lemons,
Half a glass of olive oil.

Directions

1. Put the bulgur in a large pot and pour enough boiling water to cover it all. (Do not pour too much water, it should absorb water) Cover the lid and leave for 15 minutes.

2. During the waiting period of 15 minutes, the ingredients (vegetables & greens) are thoroughly washed and chopped as in the photo.

3. The rested bulgur is mixed thoroughly (with a spoon or by hand). [Make sure that the water is well absorbed at this stage.] Add the paste and mix it well. Then add salt and spices and mix again. 

4. We add vegetables and greens. Add the lemon juice and olive oil and mix.

Service: Pickled cucumbers or pickled peppers will be nice in your presentation. Crushed red pepper be added upon request. A cup of Turkish tea with it would be nice.

After making the first recipe, you can change the proportions of other ingredients,
especially lemon, according to your taste.
