Roasted Peppers with Çökelek |
The cheese used in the recipe is çökelek. Çökelek is a type of cheese produced from the Balkans to the Caucasus. I wrote çökelek in the recipe; but I think the closest type of cheese to it is cottage cheese (paneer). I think there are very minor differences between the two cheeses.
Servings: 4-6 people
Ingredients
Half a kilo of peppers (green and long ones. I also recommend a little bit of hot pepper),3 red bell peppers,25-300 g cottage cheese (or cottage or whey cheese),1 onion,1 tomatoHalf a glass of olive oil,2 teaspoons each of salt and dried mint,1 teaspoon each of cayenne pepper and black pepper.
Directions
1. Chopped peppers are thrown into the olive oil heated in a deep pan.
2. After 2 minutes, add the onions and fry for 5 minutes.
3. When it starts to turn yellow, peeled and diced tomatoes are added and mixing is continued.
4. When the tomatoes start to melt, salt is thrown and cheese is poured. Other spices are added right after. Continue stirring continuously for 5 minutes on medium heat.
