In Turkish it is Mumbar dolması or Bumbar dolması.

Mumbar / Bumbar dolması (Stuffed Intestines)

Stuffed intestines, one of the most distinctive dishes of Ottoman cuisine, is one of the prominent examples of stuffed dishes. This delicious dish, available in offal restaurants, is made by stuffing the large intestines of sheep. Thoroughly cleaned intestines are filled with a stuffing consisting of minced meat, onions and various spices.

We can say that it is a relatively heavy meal. Therefore, it can usually be preferred in winter. At home, it is usually prepared after Eid al-Adha. Because it contains animal fat, it is consumed hot and not kept waiting. As you can try it in restaurants, I recommend trying the one made at home if you get the opportunity.

Stuffed Intestines can be found in restaurants located in metropolitan cities such as Istanbul, Ankara, Izmir and Antalya. However, it can be found more comfortably, especially in Adana, Hatay and the surrounding provinces. Finally, I would also recommend trying it with ayran* or turnip water*.

  1. Dolma foods are generally nutritious and tasty, though the food can be heavy, it gives a lot of nutritional values and it is best eaten during winter to get the best satisfaction out of it❤️
